My boyfriend has been making a lot of pancakes lately and trying different things with them. We’ve been adding a wide variety of toppings and trying out different fruits. Today we had blueberry and banana filled pancakes which were scrumptious. Last week, I had blueberry pancakes with bananas and cinnamon on top. He had pancakes with chocolate, peanut butter, and cream cheese frosting.

The pancake creating has been a very delicious adventure. Pancakes are nice for breakfast because they can be really healthy and low calorie, or they can be smothered in all that comforting junk food goodness. Pancakes can be crafted to meet your varying breakfast needs.

lemon poppy seed pancakes

dry:
3/4 cup all-purpose flour
1/4 cup whole wheat flour
1/3 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

wet:
1 cup buttermilk
zest of two lemons
1/4 cup fresh lemon juice (about 2 lemons)
3 Tbsp butter, melted
1 egg
1 1/2 tsp vanilla extract
1/3 cup poppy seeds

Mix the dry ingredients together.
Whisk the wet ingredients together with the poppy seeds.
Add the wet to the dry and mix just until combined. Lumps are fine.
Cook on a lightly greased griddle until lighty golden on both sides.
Serve with maple syrup.
