Nutrition: Tortellini and Vegetable Soup

Parsnip Soup

After a cold, winter day of outdoor climbing, it feels great to warm up with a nice pot of soup. Especially one that will help restore your energy, vitamins, and overall health. This would also be good for a light, fast meal before heading out to the gym. Either way it packed with good stuff to help fuel your body the right way, and it is low in calories to help you keep that light climbing figure.

To make this I used:

2 bags of cheese tortellini that were 180 calories for 1 cup.
2 boxes of chicken broth
3 parsnips, cut into small pieces
a handful of baby carrots, chopped
as much kale as you’d like
1 zucchini, chopped
1/2 of a medium onion chopped

I poured the chicken broth into a large pot, added the chopped carrots, onions, and parsnips, and brought it to a boil. Then I used a timer to make sure it boiled for 20 minutes. Right after it started boiling, I added the zucchini. About 10 minutes in the boiling, I added the Kale, and when there was five minutes left, I added the tortellini.

It’s simple, quick to make, and tastes great! Parsnips and zucchini are both high in fiber, which is good for your heart and digestion. Fiber also helps keep you feeling full even though they are low in calories. They both have Folate, which helps support your metabolism. They also both help support muscle functioning. Kale provides high amounts of vitamin A, K, and C. These are great for your heart health. All of it will help with providing a little boost in energy due to the B vitamins.

  1. I’ve not been climbing in a long time, but your site picture just might inspire me to do so. I still love hiking, fishing, and other outdoor adventures. It’s always good to fuel up before an outing, and I bet this soup would be great! Thanks @naturalninjas

    • Wow thanks! That is a great compliment to hear! Of course, all outdoor adventures are wonderful. We love hiking, camping, fishing, and numerous other things. Thanks for the compliment on the soup. Making it was an experiment, but it came out well. Hopefully others who try it will agree.
